A Hearty Green Salad

Making your own salads from scratch (And I mean completely from scratch—store-bought dressings have no business here!) is a simple matter. All you need are fresh greens, oil, and something acidic. The rest is just details!

Tools Needed:

  • large mixing bowl
  • chef's knife
  • serrated bread knife
  • cutting board
  • wooden stirring spoon
  • skillet
  • salad spinner (optional)
  • cheese grater (optional)

Ingredients Needed:

  • kale 1 bunch
  • lemon 1
  • garlic 1 clove
  • stale bread 1/2 loaf
  • parmesan cheese block or pre-grated
  • extra-virgin olive oil
  • salt
  • ground pepper

  • So proud!!! My first time “massaging” kale. I forgot to take a photo until I was mostly done eating but it was delicious. I cut the bread because am trying to do the whole less gluten thing, so added more parmesan for better or for worse.

  • Now that winter’s over, finally in salad mode. Thought I’d make this kale salad to accompany my egg concoction. Added a tiny drizzle of hot honey to add some sweetness to the salad.

  • Our lemon was a bit too juicy, so our salad turned out quite lemony. We’ll have to play with proportions for our salad dressing in the future. Next time, I’ll definitely add more garlic (possibly roasted or sautéed) and some extra black pepper. We dressed our salad up with mushrooms and carrots, and will save the croutons for next time — we had nice fresh bread that we weren’t willing to crouton-ify just quite yet. Nice solid salad.
