A Sizzling Good Sear

Cooking perfect steak is a piece of cake (um, a steak cake?). In this mission, my buddy Cecily McAndrews will show you how to cook skirt steak, an inexpensive but very flavorful cut. She’ll guide you through getting that good sear, testing for doneness, and what to do if the meat is undercooked. You'll also learn how to make a steak spice rub from scratch, using standard pantry herbs and spices (highly recommended over buying a specialized spice mix!).

Tools Needed:

  • heat-resistant tongs
  • heavy-bottomed skillet
  • wooden stirring spoon

  • cutting board
  • meat thermometer
  • timer (optional)

Ingredients Needed:

  • skirt steak 1 pound
  • yellow onion 1 medium
  • red bell pepper 1 medium
  • jalapeño 1
  • white button mushrooms 1 package (optional)
  • chili powder
  • garlic powder
  • paprika (optional)
  • dried thyme (optional)
  • ground cinnamon (optional)
  • flour tortillas 1 package
  • cilantro 1 small bunch
  • lime 1-2
  • salt
  • ground pepper
  • sour cream (optional)
  • salsa (optional)
  • shredded cheddar (optional)
