Noodling Around!

Learn the basics of building a great Asian noodle soup: how to create a delicious savory broth, how to cook dried noodles (in this case, rice noodles), and how to prepare a suite of fresh garnishes/toppings for customizing the end product.

Ingredients Needed:

  • yellow onion 1 medium
  • ginger 1-inch knob
  • chicken broth 2 quarts (64 oz)
  • chicken breast 2 pieces
  • thai basil 1 small bunch
  • bean sprouts 1 cup
  • cilantro 1 small bunch
  • lime 1
  • rice noodles 1 package (13-16 oz)
  • fish sauce 1-2 tablespoons
  • salt
  • coriander seeds 12 seeds (optional)
  • star anise 3 stars (optional)
  • cinnamon sticks 1 stick (optional)
  • black cardamom 2 whole pods (optional)
  • whole cloves 4-5 (optional)
